Zittle FarmJohn Zittle is behind every loaf of bread at Five Points Bakery. We met on the site of a straw bale house I was helping to build. When we were starting Five Points one year later and were unsuccessfully trying to locate local wheat, I thought back to pitching those bales off the wagon and thought, "Was that wheat straw?" It turns out it was and John became our wheat farmer. He has worked in tandem with us, researching grain varieties that work in our climate, and work well for bread. Klaas Martens from Lakeview Organic Grain supplied us with a variety of wheat called AC Morley, proven successful not only successful in our area, but great for making bread. We are very lucky and excited to work with John and look forward to pioneering the farmer to baker relationship in Western New York. |
